Game meat harvested from the wild is of the highest culinary, ethical and ecological quality – and it is exceptionally healthy as well. However, meat is also highly perishable. It is therefore the hunter’s responsibility to do everything possible, through proper handling, to preserve the quality of this premium food product. In other words, impeccable game meat hygiene is essential at all times.

Game meat hygiene begins with the choice of hunting method, calibre and ammunition. It continues with the correct field dressing and evisceration of the animal, clean retrieval from the field, prompt chilling and finally butchering and further processing. Throughout the entire process, all applicable legal requirements governing the handling of wild game must be observed, including the EU Hygiene Package, food safety legislation and consumer protection regulations. Whether the game meat is intended for commercial sale or personal consumption, handling wild game requires specialist knowledge and a thorough understanding of hygiene principles. Only then can game meat maintain the important place in human nutrition that it deserves.
